• Zefir is the dessert of my childhood in Eastern Europe—a perfect, fruity love child of meringue and marshmallow. Made with natural homemade fruit or berry purées and just a few simple ingredients, it’s naturally gluten-free, dairy-free, and fat-free. Its popularity is slowly but surely growing, offering sweet-tooth lovers a guilt-free, better, and more natural way to treat themselves.

    • Fruit or berry puree. We use mostly organic fruits and berries, which are gently blended and lightly cooked to retain their vibrant color and true, natural flavor.

    • Agar-agar: used to help the Zefir set and maintain its shape. It is plant-based as it is derived from red seaweed.

    • Dry Egg whites

    • Pure Cane Sugar

We never use artificial colors or flavors—each bite gets its vibrant taste and color from real fruits and berries.

  • Zefir is a lighter, more natural alternative to traditional desserts, though it should still be enjoyed in moderation due to its sugar content.

    1. Lower Calorie Content:
About one-third the calories of a cupcake and half of a chocolate bar per serving.

    2. Reduced Sugar Load:
Smaller portions mean less sugar overall compared to most cakes or frosted treats.

    3. Natural Ingredients:
Made from fruit purée, sugar, egg whites, and agar—no artificial additives or high-fat ingredients.

    4. Zero Fat Content:
Typically fat-free, unlike butter-based pastries or chocolate.

    5. Easy to Digest:
Its airy, fluffy texture is gentler on the stomach than dense, heavy desserts.

    6. Diet-Friendly:
Naturally gluten-free and vegetarian, suitable for many dietary needs.

    7. Lighter Sweet Fix:
Satisfies cravings without the heaviness of typical sweets.

    8. Better Snacking Option:
A cleaner, low-calorie choice compared to candy bars or baked goods.

  • One double Zefir curl (30-40 grams) contains approximately 80-100 calories, depending on the fruit puree used.

  • While Zefir can’t be made entirely sugar-free (the sugar or substitute is essential for creating its fluffy structure), we do offer low-sugar options made with allulose. These versions contain only about 2g of natural sugar from the fruit purée, making them suitable for those monitoring sugar intake.

  • Zefir and marshmallow may seem to have similarities in the way they look, however, components differ significantly. Marshmallow is made using gelatin (animal born gelling agent), corn syrup and corn starch. Zefir, on its end, is made using fruit puree, egg whites and agar (plant-based thickener).

  • Zefir should be stored at room temperature and high humidity without direct sunlight. We recommend storing Zefir for 7 days. Gradually, your Zefir  will dry out and may become covered with a sugar crust on the 7-8th day of storage. The Zefir will be safe to eat, but may lose its fluffiness and softness and become dry and crumbly.

  • Although zefir is very stable in any of these environments, in high humidity, Zefir can become sticky, lose its definition, and soften—so storing it in an airtight container away from the sun is key.
